Meet Ethan Nguyen

I should start by admitting something: my first cake was a complete disaster. Dense as a brick, burnt on the outside, raw in the middle. My roommates still bring it up at parties. But instead of giving up, I got kind of obsessed with figuring out where I went wrong. Turns out, baking is basically science, and once you understand the "why" behind recipes, everything clicks.

I'm 23, recently graduated with a degree in computer science, and currently figuring out adult life in Seattle. Baking became my stress relief during college—there's something satisfying about following precise steps and ending up with something delicious. Also, bringing cookies to study groups makes people like you. Strategic baking, I call it.

I don't have a fancy kitchen or expensive equipment. I bake in a tiny apartment with a temperamental oven that runs hot and approximately three square feet of counter space. If my recipes work here, they'll work anywhere.

My Baking Philosophy

When I'm Not Baking

I work as a junior developer, which means I stare at code all day and question my life choices regularly. Baking is my escape—you can't think about bugs in your code when you're trying not to overbeat cake batter. I also game way too much, watch baking competition shows while yelling at the screen, and I'm teaching myself to make my mom's Vietnamese recipes. Slowly. Very slowly.

My favorite recipe? No-bake cheesecake. It's what got me into baking in the first place—technically not even baking since there's no oven involved. But it taught me that impressive desserts don't have to be complicated. That changed everything for me.
