Ingredients:

  • 2 tbsp strawberry puree
  • 1 tsp fresh lime juice
  • 2 oz full-fat coconut milk, chilled
  • 1 tsp maple syrup
  • 2 tbsp non-alcoholic blue curacao syrup
  • 3 oz chilled club soda
  • 3 fresh blueberries
  • 1 slice of strawberry
  • 1 small sprig of mint

Instructions:

  1. Mix the strawberry puree and fresh lime juice in a small bowl.
  2. Stir the chilled coconut milk and maple syrup in a separate bowl.
  3. Fill your glass to the very top with crushed ice until the ice forms a slight mound above the rim.
  4. Pour the strawberry mixture directly over the ice to create the red foundation.
  5. Hold a teaspoon upside down, touching the ice just above the red layer, and slowly pour the coconut mixture over the back of the spoon until you see a distinct white band.
  6. Repeat the spoon technique with the blue curacao syrup, being very gentle to avoid mixing the white and blue.
  7. Slowly pour the club soda over the back of the spoon until the glass is full and fizzing.
  8. Place a strawberry slice, three blueberries, and a mint sprig on top of the ice.
