Ingredients:
- 4 (6 oz / 170 g) cod fillets
- ½ tsp (3 g) kosher salt
- ¼ tsp (1 g) cracked black pepper
- 1 tbsp (15 ml) olive oil
- 3 tbsp (42 g) unsalted butter, melted
- 3 cloves (9 g) garlic, minced
- 1 tbsp (15 ml) fresh lemon juice
- 1 tsp (2 g) lemon zest
- 1 tbsp (4 g) fresh parsley, chopped
Instructions:
- Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
- Use paper towels to press firmly on all sides of the cod fillets to remove surface moisture. Rub each fillet with olive oil and season with salt and pepper.
- In a small bowl, whisk together the melted butter, minced garlic, lemon juice, and lemon zest.
- Place the fillets on the prepared baking sheet and spoon the lemon-butter mixture evenly over the top of each piece.
- Bake for 12–15 minutes until the edges are opaque, the butter is bubbling and mahogany-colored, and the fish flakes easily with a fork.
- Remove from the oven, garnish immediately with fresh chopped parsley, and let the fish rest for 2 minutes before serving.
