Ingredients:

  • 1 lb medium zucchini, sliced into 1/4-inch rounds
  • 1 tbsp extra virgin olive oil
  • 1/2 cup finely grated Parmesan cheese
  • 1/4 cup panko breadcrumbs
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregano
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions:

  1. Pat the zucchini slices thoroughly with paper towels to remove excess moisture.
  2. Toss the zucchini slices in a bowl with olive oil until lightly coated.
  3. In a second bowl, combine the finely grated Parmesan, panko, garlic powder, oregano, salt, and pepper.
  4. Add the oiled zucchini to the Parmesan mixture and toss gently until every slice is evenly coated.
  5. Arrange the slices in a single layer in the air fryer basket, ensuring they are not overcrowded.
  6. Air fry at 390°F (200°C) for 8–10 minutes until the edges are deep mahogany brown and smell nutty.
