Ingredients:
- 1 lb medium zucchini, sliced into 1/4-inch rounds
- 1 tbsp extra virgin olive oil
- 1/2 cup finely grated Parmesan cheese
- 1/4 cup panko breadcrumbs
- 1/2 tsp garlic powder
- 1/2 tsp dried oregano
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions:
- Pat the zucchini slices thoroughly with paper towels to remove excess moisture.
- Toss the zucchini slices in a bowl with olive oil until lightly coated.
- In a second bowl, combine the finely grated Parmesan, panko, garlic powder, oregano, salt, and pepper.
- Add the oiled zucchini to the Parmesan mixture and toss gently until every slice is evenly coated.
- Arrange the slices in a single layer in the air fryer basket, ensuring they are not overcrowded.
- Air fry at 390°F (200°C) for 8–10 minutes until the edges are deep mahogany brown and smell nutty.
