Ingredients:
- 1.5 lb chicken breast fillets, sliced into strips
- 1 tbsp neutral oil
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/3 cup soy sauce
- 1/4 cup pineapple juice
- 2 tbsp honey
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 2 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 1 cup fresh pineapple chunks
- 1 tbsp sesame seeds, toasted
- 2 stalks green onion, thinly sliced
Instructions:
- In a medium bowl, whisk together the soy sauce, pineapple juice, honey, rice vinegar, sesame oil, garlic, and ginger.
- Toss the chicken fillets in the oil, salt, and pepper, then pour over half of the teriyaki glaze and let sit for 5 minutes.
- Arrange the chicken fillets in a single layer in the air fryer basket and air fry at 380°F (193°C) for 8–10 minutes.
- Add the pineapple chunks around the chicken and brush the remaining teriyaki glaze generously over each fillet.
- Cook for another 5–8 minutes until the chicken reaches an internal temperature of 165°F (74°C) and the pineapple is mahogany-colored.
- Garnish with toasted sesame seeds and sliced green onion before serving.
