Ingredients:

  • 1.5 lb chicken breast fillets, sliced into strips
  • 1 tbsp neutral oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/3 cup soy sauce
  • 1/4 cup pineapple juice
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 cup fresh pineapple chunks
  • 1 tbsp sesame seeds, toasted
  • 2 stalks green onion, thinly sliced

Instructions:

  1. In a medium bowl, whisk together the soy sauce, pineapple juice, honey, rice vinegar, sesame oil, garlic, and ginger.
  2. Toss the chicken fillets in the oil, salt, and pepper, then pour over half of the teriyaki glaze and let sit for 5 minutes.
  3. Arrange the chicken fillets in a single layer in the air fryer basket and air fry at 380°F (193°C) for 8–10 minutes.
  4. Add the pineapple chunks around the chicken and brush the remaining teriyaki glaze generously over each fillet.
  5. Cook for another 5–8 minutes until the chicken reaches an internal temperature of 165°F (74°C) and the pineapple is mahogany-colored.
  6. Garnish with toasted sesame seeds and sliced green onion before serving.
