- 1 1/2 cups (190g) all-purpose flour

- 3/4 cup (170g) plain Greek yogurt
- 1/2 cup (120ml) pure maple syrup
- 1 large egg (50g)
- 2 tbsp (30ml) melted coconut oil
- 1 tsp (5ml) pure vanilla extract
- 1 1/2 cups (225g) finely diced peeled apples
Instructions:
- Preheat your oven to 375°F (190°C) and line a 12-cup standard muffin tin with paper liners.
- In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
- In a medium bowl, whisk the Greek yogurt, maple syrup, egg, melted oil, and vanilla until the mixture is smooth and the oil is fully incorporated.
- Pour the wet ingredients into the dry ingredients; stir with a spatula just until the flour streaks disappear, ensuring the batter remains slightly lumpy.
- Gently fold in the diced apples using a sweeping motion.
- Divide the batter evenly among the 12 muffin liners.
- Bake for 18–22 minutes until the tops are deep golden brown.
