Ingredients:

  • 1 1/2 cups (190g) all-purpose flour
  • 1 tsp (5g) baking powder

  • 1 1/2 tsp (4g) ground cinnamon
  • 1/4 tsp (1.5g) salt
  • 3/4 cup (170g) plain Greek yogurt
  • 1/2 cup (120ml) pure maple syrup
  • 1 large egg (50g)
  • 2 tbsp (30ml) melted coconut oil
  • 1 tsp (5ml) pure vanilla extract
  • 1 1/2 cups (225g) finely diced peeled apples

Instructions:

  1. Preheat your oven to 375°F (190°C) and line a 12-cup standard muffin tin with paper liners.
  2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
  3. In a medium bowl, whisk the Greek yogurt, maple syrup, egg, melted oil, and vanilla until the mixture is smooth and the oil is fully incorporated.
  4. Pour the wet ingredients into the dry ingredients; stir with a spatula just until the flour streaks disappear, ensuring the batter remains slightly lumpy.
  5. Gently fold in the diced apples using a sweeping motion.
  6. Divide the batter evenly among the 12 muffin liners.
  7. Bake for 18–22 minutes until the tops are deep golden brown.
