Ingredients:
- 2 lbs (900g) Apples (Mix of Granny Smith and Honeycrisp), peeled and sliced thin
- 1/2 cup (100g) Granulated sugar
- 1/4 cup (50g) Brown sugar, packed
- 1 tbsp (8g) Ground cinnamon
- 1 tbsp (15ml) Lemon juice
- 1/2 cup (60g) Walnuts or pecans, finely chopped
- 1/4 cup (30g) Raisins or dried cranberries
- 1 pinch (1g) Salt
- 1 package (16 oz / 450g) Athens phyllo dough, thawed
- 3/4 cup (170g) Unsalted butter, melted
Instructions:
- In a large bowl, toss the sliced apples with lemon juice to prevent oxidation.
- Fold in the granulated sugar, brown sugar, cinnamon, and salt.
- Stir in the chopped nuts and raisins until the apples are evenly coated in a glossy, spiced syrup. Let this sit for 10 minutes to allow flavors to meld.
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Lay a clean kitchen towel on your workspace. Place one sheet of phyllo on the towel and brush lightly with melted butter.
- Repeat this process until you have 5-6 sheets stacked, buttering each layer.
- Spoon the apple mixture in a log shape down the center of the phyllo stack, leaving a 2-inch border on the sides.
- Gently fold the side edges over the filling, then roll the strudel tightly but carefully.
- Place the roll seam-side down on the baking sheet.
- Brush the entire exterior with remaining melted butter and bake for 40 minutes or until mahogany-colored and crisp.
