Ingredients:

  • 6 large Honeycrisp or Granny Smith apples (approx. 3 lbs)
  • 2 tbsp melted coconut oil
  • 1/4 cup pure maple syrup (50g)
  • 1 tbsp ground cinnamon
  • 1/4 tsp sea salt
  • 1 tsp pure vanilla extract
  • 2 tbsp water or unsweetened apple cider

Instructions:

  1. Preheat your oven to 350°F (175°C). Wash the apples and use a corer or paring knife to remove the seeds and stem. Create a hollow center about 1 inch (2.5cm) wide, being careful not to puncture the bottom of the apple.
  2. In a small bowl, whisk together the melted coconut oil, maple syrup, cinnamon, salt, and vanilla extract until the mixture is a smooth, glossy paste.
  3. Place the apples upright in a 9x9 inch baking dish. Spoon the cinnamon mixture evenly into each hollowed center, pressing down slightly. Pour the 2 tbsp of water or cider into the bottom of the dish to create steam.
  4. Bake for 35–45 minutes until the apples are tender when pierced with a fork and the tops are mahogany-colored and bubbling.
  5. Remove from the oven and let the apples sit for 5 minutes before serving.
