Ingredients:

  • 4 (6 oz / 170g) cod fillets, patted dry
  • ½ tsp (3g) sea salt
  • ¼ tsp (1g) cracked black pepper
  • 3 tbsp (42g) unsalted butter, melted
  • 1 tbsp (15ml) fresh lemon juice
  • 2 cloves (6g) garlic, minced
  • 2 tbsp (30g) capers, drained
  • 1 tbsp (3g) fresh parsley, chopped
  • ¼ tsp (1g) red pepper flakes

Instructions:

  1. Preheat the oven to 400°F (200°C). Line a 9x13 inch baking dish with parchment paper or lightly grease it.
  2. Pat the cod fillets thoroughly dry with paper towels and season both sides with sea salt and cracked black pepper.
  3. In a small bowl, whisk together the melted butter and fresh lemon juice. Stir in the minced garlic, drained capers, and red pepper flakes until glossy.
  4. Arrange the fillets in the baking dish and spoon the lemon-garlic butter mixture evenly over each piece of fish.
  5. Bake for 12–15 minutes until the flesh is opaque and internal temperature reaches 145°F (63°C).
  6. Remove from oven and garnish with fresh chopped parsley immediately.
