Ingredients:

  • 1.5 lb frozen cod fillets
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp cracked black pepper
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 cup Panko breadcrumbs
  • 1 tbsp melted butter
  • 1 tbsp fresh parsley, minced

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
  2. Arrange the frozen cod fillets on the pan, ensuring they aren't touching to allow hot air to circulate for an even cook.
  3. In a small bowl, whisk together the olive oil, kosher salt, cracked black pepper, garlic powder, and smoked paprika.
  4. Brush the oil and spice mixture generously over the top and sides of each frozen fillet.
  5. Mix the Panko breadcrumbs and melted butter separately in a bowl, then press the mixture firmly onto the top of the seasoned fish.
  6. Place the pan on the center rack of the oven and bake for 15 to 20 minutes until the edges are opaque white and the topping is mahogany-colored.
  7. Verify doneness by ensuring the fish flakes easily with a fork or reaches an internal temperature of 145°F (63°C).
