Ingredients:
- 4 (6 oz / 170g) cod fillets
- 1/2 tsp (3g) salt
- 1/4 tsp (1g) black pepper
- 4 tbsp (57g) unsalted butter, melted
- 3 cloves (9g) garlic, minced fine
- 1 tbsp (8g) Old Bay Seasoning
- 1 tbsp (15ml) fresh lemon juice
- 1 tsp (2g) lemon zest
- 2 tbsp (8g) fresh parsley, chopped
- Lemon wedges for serving
Instructions:
- Use paper towels to pat the cod fillets bone-dry on all sides to prevent steaming and ensure the butter adheres.
- Lightly sprinkle each fillet with salt and black pepper, then place them in a parchment-lined baking dish.
- In a small bowl, combine melted butter, minced garlic, Old Bay seasoning, lemon juice, and lemon zest.
- Spoon the garlic butter mixture evenly over each fillet, ensuring the sides are coated.
- Bake in a preheated oven at 400°F (200°C) for 12-15 minutes until the butter is bubbling and the fish is opaque.
- Verify the cod is cooked through when the internal temperature reaches 145°F (63°C) or the thickest part flakes easily with a fork.
- Remove from oven and immediately sprinkle with chopped parsley and serve with lemon wedges.
