Ingredients:

  • 4 (6 oz / 170g) cod fillets
  • 1/2 tsp (3g) salt
  • 1/4 tsp (1g) black pepper
  • 4 tbsp (57g) unsalted butter, melted
  • 3 cloves (9g) garlic, minced fine
  • 1 tbsp (8g) Old Bay Seasoning
  • 1 tbsp (15ml) fresh lemon juice
  • 1 tsp (2g) lemon zest
  • 2 tbsp (8g) fresh parsley, chopped
  • Lemon wedges for serving

Instructions:

  1. Use paper towels to pat the cod fillets bone-dry on all sides to prevent steaming and ensure the butter adheres.
  2. Lightly sprinkle each fillet with salt and black pepper, then place them in a parchment-lined baking dish.
  3. In a small bowl, combine melted butter, minced garlic, Old Bay seasoning, lemon juice, and lemon zest.
  4. Spoon the garlic butter mixture evenly over each fillet, ensuring the sides are coated.
  5. Bake in a preheated oven at 400°F (200°C) for 12-15 minutes until the butter is bubbling and the fish is opaque.
  6. Verify the cod is cooked through when the internal temperature reaches 145°F (63°C) or the thickest part flakes easily with a fork.
  7. Remove from oven and immediately sprinkle with chopped parsley and serve with lemon wedges.
