Ingredients:
- 6 oz spring mix
- 1 cup fresh blueberries
- 1/2 cup shelled pistachios, unsalted
- 1/3 cup feta cheese, crumbled
- 3 tbsp extra virgin olive oil
- 2 tbsp balsamic vinegar
- 1 tbsp maple syrup
- 1 tsp Dijon mustard
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions:
- Place the pistachios in a dry skillet over medium heat. Shake the pan frequently for 3–5 minutes until the nuts smell nutty and fragrant, then remove from heat immediately.
- Combine the olive oil, balsamic vinegar, maple syrup, Dijon mustard, salt, and pepper in a glass jar. Shake vigorously for 30 seconds until the mixture is a thickened, opaque emulsion.
- Place the spring mix in a large bowl and gently fold in the blueberries and toasted pistachios.
- Pour the dressing over the greens and toss lightly using a lifting motion to avoid bruising the blueberries. Top with crumbled feta just before serving.
