Ingredients:

  • 6 oz spring mix
  • 1 cup fresh blueberries
  • 1/2 cup shelled pistachios, unsalted
  • 1/3 cup feta cheese, crumbled
  • 3 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp maple syrup
  • 1 tsp Dijon mustard
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions:

  1. Place the pistachios in a dry skillet over medium heat. Shake the pan frequently for 3–5 minutes until the nuts smell nutty and fragrant, then remove from heat immediately.
  2. Combine the olive oil, balsamic vinegar, maple syrup, Dijon mustard, salt, and pepper in a glass jar. Shake vigorously for 30 seconds until the mixture is a thickened, opaque emulsion.
  3. Place the spring mix in a large bowl and gently fold in the blueberries and toasted pistachios.
  4. Pour the dressing over the greens and toss lightly using a lifting motion to avoid bruising the blueberries. Top with crumbled feta just before serving.
