Ingredients:

  • 2 (6 oz / 170g) Cod fillets
  • 1/2 tsp (3g) Salt
  • 1/4 tsp (1g) Black pepper
  • 1/2 cup (65g) All-purpose flour
  • 1 (50g) Large egg, beaten
  • 1 cup (60g) Panko breadcrumbs
  • 1 tsp (2g) Garlic powder
  • 1 tsp (2g) Paprika
  • 1/4 tsp (1g) Cayenne pepper
  • 2 tbsp (30ml) Olive oil

Instructions:

  1. Pat the cod fillets extremely dry with paper towels and season both sides with salt and pepper.
  2. Set up a dredging station with three bowls: the first with flour, the second with beaten egg, and the third with panko breadcrumbs mixed with garlic powder, paprika, and cayenne.
  3. Dredge each fillet in the flour, shaking off any excess, then dip into the egg wash until fully submerged.
  4. Press the fillets firmly into the panko mixture, ensuring the breadcrumbs are packed tightly onto the fish.
  5. Preheat the air fryer to 400°F (200°C) and lightly grease the basket or use a perforated parchment liner.
  6. Place the fillets in a single layer with space between them, lightly spray the tops with oil, and air fry for 10–12 minutes, flipping halfway through, until the internal temperature reaches 145°F (63°C).
