Ingredients:
- 2 (6 oz / 170g) Cod fillets
- 1/2 tsp (3g) Salt
- 1/4 tsp (1g) Black pepper
- 1/2 cup (65g) All-purpose flour
- 1 (50g) Large egg, beaten
- 1 cup (60g) Panko breadcrumbs
- 1 tsp (2g) Garlic powder
- 1 tsp (2g) Paprika
- 1/4 tsp (1g) Cayenne pepper
- 2 tbsp (30ml) Olive oil
Instructions:
- Pat the cod fillets extremely dry with paper towels and season both sides with salt and pepper.
- Set up a dredging station with three bowls: the first with flour, the second with beaten egg, and the third with panko breadcrumbs mixed with garlic powder, paprika, and cayenne.
- Dredge each fillet in the flour, shaking off any excess, then dip into the egg wash until fully submerged.
- Press the fillets firmly into the panko mixture, ensuring the breadcrumbs are packed tightly onto the fish.
- Preheat the air fryer to 400°F (200°C) and lightly grease the basket or use a perforated parchment liner.
- Place the fillets in a single layer with space between them, lightly spray the tops with oil, and air fry for 10–12 minutes, flipping halfway through, until the internal temperature reaches 145°F (63°C).
