Ingredients:

  • 1 lb ground chicken
  • 1/2 cup almond flour
  • 1/4 cup finely diced celery
  • 1 large egg
  • 2 tbsp buffalo wing sauce
  • 1 tbsp melted unsalted butter
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked black pepper
  • 1 tbsp cooking oil
  • 4 brioche buns
  • 1/2 cup ranch or blue cheese dressing
  • 1 cup shredded iceberg lettuce
  • 1/2 cup sliced dill pickles
  • 1 large tomato

Instructions:

  1. In a large mixing bowl, combine the ground chicken, almond flour, diced celery, beaten egg, buffalo sauce, melted butter, and seasonings. Mix until just combined, avoiding overworking the meat.
  2. Divide the mixture into four equal portions and shape into patties roughly 3/4 inch thick. Press a small indentation into the center of each burger with your thumb to ensure even cooking.
  3. Heat a skillet or grill over medium-high heat with oil. Sear the patties for 5–6 minutes per side until the internal temperature reaches 165°F (74°C).
  4. During the final minute of cooking, brush a teaspoon of extra buffalo sauce onto the top of each patty.
  5. Spread ranch or blue cheese dressing on the toasted bottom bun. Layer with lettuce, the buffalo chicken patty, a tomato slice, and pickles. Top with the crown bun.
