Ingredients:
- 1 lb ground chicken
- 1/2 cup almond flour
- 1/4 cup finely diced celery
- 1 large egg
- 2 tbsp buffalo wing sauce
- 1 tbsp melted unsalted butter
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp kosher salt
- 1/4 tsp cracked black pepper
- 1 tbsp cooking oil
- 4 brioche buns
- 1/2 cup ranch or blue cheese dressing
- 1 cup shredded iceberg lettuce
- 1/2 cup sliced dill pickles
- 1 large tomato
Instructions:
- In a large mixing bowl, combine the ground chicken, almond flour, diced celery, beaten egg, buffalo sauce, melted butter, and seasonings. Mix until just combined, avoiding overworking the meat.
- Divide the mixture into four equal portions and shape into patties roughly 3/4 inch thick. Press a small indentation into the center of each burger with your thumb to ensure even cooking.
- Heat a skillet or grill over medium-high heat with oil. Sear the patties for 5–6 minutes per side until the internal temperature reaches 165°F (74°C).
- During the final minute of cooking, brush a teaspoon of extra buffalo sauce onto the top of each patty.
- Spread ranch or blue cheese dressing on the toasted bottom bun. Layer with lettuce, the buffalo chicken patty, a tomato slice, and pickles. Top with the crown bun.
