Ingredients:
- 2 lbs (907g) Russet potatoes, peeled and grated
- ½ cup (50g) All-purpose flour
- 2 large (110g) Eggs, lightly beaten
- 1 tsp (6g) Baking powder
- 1 cup (113g) Sharp Cheddar cheese, shredded
- ¼ cup (25g) Parmesan cheese, finely grated
- 2 stalks (15g) Green onions, thinly sliced
- 2 cloves (6g) Garlic, minced
- 1 tsp (6g) Salt
- ½ tsp (1g) Black pepper
- ¼ cup (60ml) Vegetable oil
Instructions:
- Grate the potatoes using the large holes of a box grater.
- Place the shredded potatoes in a clean kitchen towel and twist tightly over the sink until no more water drips out to ensure a crispy result.
- In a large bowl, combine the flour, baking powder, salt, and black pepper.
- Fold in the beaten eggs, minced garlic, and thinly sliced green onions.
- Gently stir in the shredded cheddar, parmesan, and squeezed potatoes until the mixture is evenly coated.
- Heat vegetable oil in a skillet over medium-high heat until it shimmers.
- Scoop approximately ⅓ cup of the mixture into the pan and press down slightly with a spatula to form a uniform disc.
- Fry for 3-4 minutes per side until the exterior is mahogany-colored and deep golden brown.
- Drain the pancakes on paper towels for 60 seconds to maintain the crust.
