Ingredients:

  • 1 lb lean ground chicken
  • 1 tbsp olive oil
  • 1/2 cup yellow onion, finely diced
  • 1/2 cup green bell pepper, finely diced
  • 3 cloves garlic, minced
  • 1/2 cup ketchup
  • 1 tbsp brown sugar
  • 1 tbsp Worcestershire sauce
  • 1 tsp yellow mustard
  • 1/2 tsp smoked paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 4 brioche or whole wheat buns
  • 4 slices sharp cheddar cheese

Instructions:

  1. Heat olive oil in a large cast iron or non stick skillet over medium high heat.
  2. Add the ground chicken to the pan. Note: Don't stir immediately.
  3. Let the meat sit undisturbed for 2 minutes until a golden brown crust forms.
  4. Use your spatula to break the chicken into small crumbles and cook until no pink remains.
  5. Lower the heat to medium. Stir in the diced onion and green bell pepper.
  6. Sauté for 3-5 minutes until the onions are translucent.
  7. Stir in the minced garlic and cook for 30 seconds until fragrant.
  8. Pour in the ketchup, brown sugar, Worcestershire sauce, mustard, paprika, salt, and pepper.
  9. Stir everything together until the chicken is thoroughly coated.
  10. Reduce heat to low and simmer for 5-7 minutes until the sauce thickens and clings to the meat.
  11. Toast your buns in a toaster or separate pan.
  12. Scoop the Chicken Sloppy Joes onto the buns and top with a slice of cheddar. Let the cheese melt for 30 seconds.
