Ingredients:

  • 1 lb ground chicken
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1 tbsp neutral oil
  • 4 brioche buns
  • 4 slices cheddar cheese
  • 2 tbsp unsalted butter
  • 1/4 cup mayonnaise
  • 1 tbsp Sriracha
  • 1 tsp lemon juice
  • 1/2 tsp smoked paprika

Instructions:

  1. Divide ground chicken into 4 equal portions (approximately 4 oz each) and roll into loose balls without overworking the meat.
  2. Season the outside of the chicken balls generously with salt, black pepper, and garlic powder.
  3. Spread softened butter on the cut sides of the brioche buns.
  4. Heat a cast-iron skillet or griddle over medium-high heat with neutral oil until shimmering.
  5. Place chicken balls in the pan and immediately press them flat using a sturdy spatula and parchment paper to create a thin patty.
  6. Sear until a deep brown crust forms, then flip and cook for another 2-3 minutes.
  7. Top each patty with a slice of cheese during the final minute of cooking until melted.
  8. Whisk together mayonnaise, Sriracha, lemon juice, and smoked paprika to create the sauce.
  9. Assemble the burgers by spreading sauce on toasted buns and adding the cheese-topped chicken patties.
