- 1 lb ground chicken
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1 tbsp neutral oil
- 4 brioche buns
- 4 slices cheddar cheese
- 2 tbsp unsalted butter
- 1/4 cup mayonnaise
- 1 tbsp Sriracha
- 1 tsp lemon juice
- 1/2 tsp smoked paprika
Instructions:
- Divide ground chicken into 4 equal portions (approximately 4 oz each) and roll into loose balls without overworking the meat.
- Season the outside of the chicken balls generously with salt, black pepper, and garlic powder.
- Spread softened butter on the cut sides of the brioche buns.
- Heat a cast-iron skillet or griddle over medium-high heat with neutral oil until shimmering.
- Place chicken balls in the pan and immediately press them flat using a sturdy spatula and parchment paper to create a thin patty.
- Sear until a deep brown crust forms, then flip and cook for another 2-3 minutes.
- Top each patty with a slice of cheese during the final minute of cooking until melted.
- Whisk together mayonnaise, Sriracha, lemon juice, and smoked paprika to create the sauce.
- Assemble the burgers by spreading sauce on toasted buns and adding the cheese-topped chicken patties.
