Ingredients:
- 12 large hard-boiled eggs
- 1 medium ripe avocado
- 2 tbsp basil pesto
- 2 tbsp plain Greek yogurt
- 1 tbsp fresh lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp smoked paprika
- 2 stalks fresh chives
- 1 small yellow bell pepper
Instructions:
- Place eggs in a pot and cover with one inch of water. Bring to a boil, then remove from heat, cover, and let sit for 12 minutes.
- Immediately plunge eggs into an ice bath until chilled. Peel carefully to ensure the whites remain smooth.
- Slice eggs in half lengthwise and scoop yolks into a medium mixing bowl.
- Mash the yolks with avocado, pesto, Greek yogurt, and lemon juice until the mixture is smooth and uniform green. Season with salt and pepper. Wait until it looks like a thick paste before moving on.
- Transfer the filling to a piping bag fitted with a large star tip.
- Pipe a tall, swirling mound of filling into each egg white, starting narrow at the top and widening at the base to mimic a tree. Continue until you have a distinct conical shape.
- Decorate each tree with a tiny piece of yellow bell pepper on top as a star, a few dots of smoked paprika as ornaments, and a small chive snippet at the base as the trunk.
