Ingredients:

  • 12 large hard-boiled eggs
  • 1 medium ripe avocado
  • 2 tbsp basil pesto
  • 2 tbsp plain Greek yogurt
  • 1 tbsp fresh lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp smoked paprika
  • 2 stalks fresh chives
  • 1 small yellow bell pepper

Instructions:

  1. Place eggs in a pot and cover with one inch of water. Bring to a boil, then remove from heat, cover, and let sit for 12 minutes.
  2. Immediately plunge eggs into an ice bath until chilled. Peel carefully to ensure the whites remain smooth.
  3. Slice eggs in half lengthwise and scoop yolks into a medium mixing bowl.
  4. Mash the yolks with avocado, pesto, Greek yogurt, and lemon juice until the mixture is smooth and uniform green. Season with salt and pepper. Wait until it looks like a thick paste before moving on.
  5. Transfer the filling to a piping bag fitted with a large star tip.
  6. Pipe a tall, swirling mound of filling into each egg white, starting narrow at the top and widening at the base to mimic a tree. Continue until you have a distinct conical shape.
  7. Decorate each tree with a tiny piece of yellow bell pepper on top as a star, a few dots of smoked paprika as ornaments, and a small chive snippet at the base as the trunk.
