Ingredients:
- 3 tbsp (42g) Unsalted Butter
- 3 tbsp (24g) All-purpose Flour
- 1.5 cups (355ml) Whole milk
- 1/2 tsp (3g) Kosher Salt
- 1/4 tsp (1g) Freshly cracked Black Pepper
- 1/8 tsp (0.5g) Ground Nutmeg
- 16 oz (450g) Frozen Sweet Peas
- 1/2 tsp (2g) Granulated sugar
Instructions:
- Melt the butter in a medium heavy-bottomed saucepan over medium-low heat until it begins to foam. Whisk in the flour steadily for 2 minutes to create a blond roux, removing the raw flour taste without browning.
- Slowly drizzle in the milk one splash at a time, whisking vigorously after each addition to maintain a smooth, glossy consistency and prevent clumping.
- Increase heat to medium and continue whisking until the sauce reaches a gentle simmer and thickens enough to coat the back of a spoon. Whisk in the salt, black pepper, and ground nutmeg.
- Gently fold in the frozen peas and optional sugar. Simmer for 3–5 minutes until the peas are heated through and vibrant green. If the sauce is too thick, loosen with an extra tablespoon of milk.
