Ingredients:

  • 4 (6 oz / 170g) Cod fillets
  • ½ tsp (3g) Kosher salt
  • ¼ tsp (1g) Cracked black pepper
  • 1 tbsp (15ml) Lemon juice
  • ½ cup (65g) All-purpose flour
  • 2 (100g) Large eggs, beaten
  • 1 cup (60g) Panko breadcrumbs
  • 1 tbsp (8g) Old Bay Seasoning
  • 2 tbsp (30ml) Olive oil spray

Instructions:

  1. Pat the cod fillets bone-dry with paper towels to ensure breading adhesion. Drizzle with lemon juice and season with salt and pepper.
  2. Set up three shallow bowls for the dredging station: one with all-purpose flour, one with beaten eggs, and one with panko breadcrumbs mixed with Old Bay seasoning.
  3. Coat each fillet in flour, shaking off any excess.
  4. Dip the floured fillet completely into the beaten egg.
  5. Press the fillet firmly into the panko mixture, ensuring every millimeter is covered in a thick layer of crumbs.
  6. Preheat the air fryer to 400°F (200°C).
  7. Place fillets in a single layer in the air fryer basket, ensuring they do not touch.
  8. Spray the tops of the fillets generously with olive oil spray until no dry crumbs remain.
  9. Air fry for 7–8 minutes, flip the fillets carefully, spray the other side with olive oil, and cook for another 6–7 minutes.
  10. Remove from the air fryer when the crust is mahogany-colored and the fish flakes easily with a fork.
