Ingredients:
- 2 large Vidalia or Yellow onions, sliced into 1/2 inch rings
- 1 cup ice water
- 1/2 cup all-purpose flour
- 1/4 cup cornstarch
- 1 tsp garlic powder
- 2 large eggs
- 1/4 cup buttermilk
- 2 cups Panko breadcrumbs
- 1/4 cup finely grated Parmesan cheese
- 1 tsp smoked paprika
- 1/2 tsp sea salt
- Avocado or grapeseed oil spray
Instructions:
- Separate the onion rings and soak them in ice water for 15 minutes to remove harsh sulfur and help starch adhesion.
- Pat the onion rings completely dry with paper towels to prevent the batter from steaming off.
- In a shallow bowl, whisk together the flour, cornstarch, and garlic powder. Toss the dry rings in this mixture until fully coated.
- In a second bowl, whisk the eggs and buttermilk. Dip each floured ring into the wet binder, ensuring no dry spots remain.
- In a third bowl, combine Panko, Parmesan, smoked paprika, and sea salt. Press each ring firmly into the blend to create a thick, even crust.
- Place rings in a single layer in the air fryer basket, ensuring they do not overlap. Mist generously with oil spray.
- Air fry at 400°F (200°C) for 5 minutes, then flip carefully.
- Spray the other side and cook for 3 to 5 minutes more until deep golden and crackling.
