Ingredients:

  • 2 large Vidalia or Yellow onions, sliced into 1/2 inch rings
  • 1 cup ice water
  • 1/2 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1 tsp garlic powder
  • 2 large eggs
  • 1/4 cup buttermilk
  • 2 cups Panko breadcrumbs
  • 1/4 cup finely grated Parmesan cheese
  • 1 tsp smoked paprika
  • 1/2 tsp sea salt
  • Avocado or grapeseed oil spray

Instructions:

  1. Separate the onion rings and soak them in ice water for 15 minutes to remove harsh sulfur and help starch adhesion.
  2. Pat the onion rings completely dry with paper towels to prevent the batter from steaming off.
  3. In a shallow bowl, whisk together the flour, cornstarch, and garlic powder. Toss the dry rings in this mixture until fully coated.
  4. In a second bowl, whisk the eggs and buttermilk. Dip each floured ring into the wet binder, ensuring no dry spots remain.
  5. In a third bowl, combine Panko, Parmesan, smoked paprika, and sea salt. Press each ring firmly into the blend to create a thick, even crust.
  6. Place rings in a single layer in the air fryer basket, ensuring they do not overlap. Mist generously with oil spray.
  7. Air fry at 400°F (200°C) for 5 minutes, then flip carefully.
  8. Spray the other side and cook for 3 to 5 minutes more until deep golden and crackling.
