- 1 tsp kosher salt
- 1/2 tsp black pepper, freshly cracked
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tbsp lemon pepper seasoning
- 1/2 tsp smoked paprika
Instructions:
- Preheat your oven to 400°F (200°C). Use paper towels to pat the wings until they are bone-dry to ensure maximum crispness.
- In a large bowl, toss the dried wings with 1 tablespoon of neutral oil until evenly coated.
- In a small bowl, whisk together the cornstarch, salt, pepper, garlic powder, onion powder, lemon pepper, and smoked paprika.
- Sprinkle the spice and cornstarch mixture over the wings and toss vigorously until every wing is coated in a fine, dusty veil.
- Arrange the wings on a wire rack set over a large rimmed baking sheet, ensuring they do not touch to allow for 360-degree airflow.
- Bake for 20 minutes, then flip the wings using tongs. Bake for an additional 20–25 minutes until the skin is golden-brown and firm.
