Ingredients:

  • 2 lbs chicken wings, party style (flats and drums separated)
  • 1 tbsp neutral oil (avocado or vegetable oil)
  • 2 tbsp cornstarch
  • 1 tsp kosher salt
  • 1/2 tsp black pepper, freshly cracked
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp lemon pepper seasoning
  • 1/2 tsp smoked paprika

Instructions:

  1. Preheat your oven to 400°F (200°C). Use paper towels to pat the wings until they are bone-dry to ensure maximum crispness.
  2. In a large bowl, toss the dried wings with 1 tablespoon of neutral oil until evenly coated.
  3. In a small bowl, whisk together the cornstarch, salt, pepper, garlic powder, onion powder, lemon pepper, and smoked paprika.
  4. Sprinkle the spice and cornstarch mixture over the wings and toss vigorously until every wing is coated in a fine, dusty veil.
  5. Arrange the wings on a wire rack set over a large rimmed baking sheet, ensuring they do not touch to allow for 360-degree airflow.
  6. Bake for 20 minutes, then flip the wings using tongs. Bake for an additional 20–25 minutes until the skin is golden-brown and firm.
