Ingredients:
- 1 lb Brussels sprouts, trimmed and halved lengthwise
- 2 tbsp extra virgin olive oil
- 1/2 tsp sea salt
- 1/4 tsp cracked black pepper
- 1/2 cup finely grated Parmesan cheese
- 3 cloves garlic, minced
- 1/2 tsp smoked paprika
- 1/4 tsp red pepper flakes
Instructions:
- Preheat your oven to 200°C (approximately 392°F). Place an empty, large rimmed baking sheet inside the oven as it preheats to ensure a high-heat sear.
- In a large mixing bowl, whisk together the olive oil, minced garlic, sea salt, black pepper, and smoked paprika.
- Add the halved Brussels sprouts to the bowl and toss vigorously until every sprout is thoroughly coated in the oil and spice emulsion.
- Add half of the finely grated Parmesan cheese to the bowl and toss again so the cheese adheres to the oiled surfaces of the sprouts.
- Carefully remove the hot baking sheet from the oven. Arrange the sprouts in a single layer, cut-side down, onto the sheet. Sprinkle the remaining Parmesan cheese over the top.
- Roast for 15–20 minutes until the exterior is deeply browned and the cheese has formed a lacy, crisp crust.
