Ingredients:

  • 1 lb Brussels sprouts, trimmed and halved lengthwise
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper
  • 1/2 cup finely grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1/2 tsp smoked paprika
  • 1/4 tsp red pepper flakes

Instructions:

  1. Preheat your oven to 200°C (approximately 392°F). Place an empty, large rimmed baking sheet inside the oven as it preheats to ensure a high-heat sear.
  2. In a large mixing bowl, whisk together the olive oil, minced garlic, sea salt, black pepper, and smoked paprika.
  3. Add the halved Brussels sprouts to the bowl and toss vigorously until every sprout is thoroughly coated in the oil and spice emulsion.
  4. Add half of the finely grated Parmesan cheese to the bowl and toss again so the cheese adheres to the oiled surfaces of the sprouts.
  5. Carefully remove the hot baking sheet from the oven. Arrange the sprouts in a single layer, cut-side down, onto the sheet. Sprinkle the remaining Parmesan cheese over the top.
  6. Roast for 15–20 minutes until the exterior is deeply browned and the cheese has formed a lacy, crisp crust.
