- 2 whole-wheat English muffins, split (130g total)
- 1 tsp extra virgin olive oil (5ml)
- 1/4 cup low-sodium marinara or pizza sauce (60g)
- 1/2 cup shredded part-skim mozzarella cheese (56g)
- 1 tbsp freshly grated Parmesan cheese (5g)
- 8 slices turkey pepperoni (16g)
- 1/8 tsp dried oregano
- 1 pinch red pepper flakes
Instructions:
- Preheat your oven to 400°F (205°C). While it warms up, split the 2 whole wheat English muffins and place them cut side up on a rimmed baking sheet.
- Lightly brush the surfaces with 1 tsp extra virgin olive oil. Bake for 3-4 minutes. Watch for the edges to turn golden brown, which signals that the moisture barrier has formed.
- Remove the tray from the oven carefully. Spread exactly 1 tablespoon of marinara sauce over each of the 4 halves. Note: Keeping the sauce measured prevents the bread from getting weighed down.
- Layer the cheese starting with the 1/2 cup mozzarella, then sprinkle the 1 tbsp Parmesan evenly across the four pizzas.
- Top each half with 2 slices of turkey pepperoni (8 slices total).
- Sprinkle the 1/8 tsp dried oregano and a pinch of red pepper flakes over the top.
- Return the tray to the oven and bake for 5-7 minutes. The cheese should be bubbling and showing small golden spots.
- Optional: If you like a deeply browned top, turn on the broiler for the final 60 seconds. Stay right there and watch it; it goes from perfect to burnt in a heartbeat.
- Remove from the oven and let them sit for 2 minutes. This allows the sauce to set so it doesn't slide off during the first bite.
- Serve immediately while the crust is at its peak crispness.
