Ingredients:
- 6 cups (approx. 1.5kg) peeled and sliced Granny Smith or Honeycrisp apples
- 2 tbsp lemon juice
- 1/2 cup maple syrup
- 1 tbsp ground cinnamon
- 1 tbsp cornstarch
- 1 cup rolled oats
- 1 cup almond flour
- 1/2 cup dark brown sugar, packed
- 1/2 tsp sea salt
- 1/2 cup cold vegan butter, cubed
- 1 tsp ground cinnamon
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large bowl, toss the sliced apples with lemon juice, maple syrup, cinnamon, and cornstarch until evenly coated.
- Pour the apple mixture into a 9x9 inch baking dish.
- In a separate bowl, whisk together rolled oats, almond flour, dark brown sugar, salt, and cinnamon.
- Add the cold, cubed vegan butter to the dry ingredients. Use a pastry cutter or your fingers to work the butter in until the mixture resembles coarse crumbs with a few pea-sized lumps.
- Spread the crumble evenly over the apples without pressing down.
- Bake for 35-40 minutes until the topping is a deep golden brown and the apple juices are bubbling and thick around the edges.
