Ingredients:

  • 6 cups (approx. 1.5kg) peeled and sliced Granny Smith or Honeycrisp apples
  • 2 tbsp lemon juice
  • 1/2 cup maple syrup
  • 1 tbsp ground cinnamon
  • 1 tbsp cornstarch
  • 1 cup rolled oats
  • 1 cup almond flour
  • 1/2 cup dark brown sugar, packed
  • 1/2 tsp sea salt
  • 1/2 cup cold vegan butter, cubed
  • 1 tsp ground cinnamon

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, toss the sliced apples with lemon juice, maple syrup, cinnamon, and cornstarch until evenly coated.
  3. Pour the apple mixture into a 9x9 inch baking dish.
  4. In a separate bowl, whisk together rolled oats, almond flour, dark brown sugar, salt, and cinnamon.
  5. Add the cold, cubed vegan butter to the dry ingredients. Use a pastry cutter or your fingers to work the butter in until the mixture resembles coarse crumbs with a few pea-sized lumps.
  6. Spread the crumble evenly over the apples without pressing down.
  7. Bake for 35-40 minutes until the topping is a deep golden brown and the apple juices are bubbling and thick around the edges.
