Ingredients:
- 1 lb fresh strawberries
- 10 oz high-quality semi-sweet chocolate chips
- 1 tsp refined coconut oil
- 4 oz white chocolate melting wafers
- 1 tbsp crushed pistachios
- 0.5 tsp sea salt flakes
Instructions:
- Wash strawberries in a cold water bath. Transfer to a clean kitchen towel, pat dry individually, and allow to air-dry for at least 30 minutes until the skin feels tacky.
- Set up a double boiler by placing a heat-proof glass bowl over a saucepan with 1 inch of simmering water. Add semi-sweet chocolate and coconut oil.
- Stir constantly until 90% melted, then remove from heat and continue stirring until completely smooth to prevent scorching.
- Hold each strawberry by the hull and submerge into the chocolate at a 45-degree angle. Rotate slowly, then lift and shake gently to remove excess chocolate.
- Place berries on parchment paper. Immediately add decorative toppings like pistachios or sea salt while the chocolate is still wet.
- Leave the berries at room temperature for 15 minutes, then refrigerate for 15 minutes until the shell is hard and matte.
