Ingredients:

  • 1 lb fresh strawberries
  • 10 oz high-quality semi-sweet chocolate chips
  • 1 tsp refined coconut oil
  • 4 oz white chocolate melting wafers
  • 1 tbsp crushed pistachios
  • 0.5 tsp sea salt flakes

Instructions:

  1. Wash strawberries in a cold water bath. Transfer to a clean kitchen towel, pat dry individually, and allow to air-dry for at least 30 minutes until the skin feels tacky.
  2. Set up a double boiler by placing a heat-proof glass bowl over a saucepan with 1 inch of simmering water. Add semi-sweet chocolate and coconut oil.
  3. Stir constantly until 90% melted, then remove from heat and continue stirring until completely smooth to prevent scorching.
  4. Hold each strawberry by the hull and submerge into the chocolate at a 45-degree angle. Rotate slowly, then lift and shake gently to remove excess chocolate.
  5. Place berries on parchment paper. Immediately add decorative toppings like pistachios or sea salt while the chocolate is still wet.
  6. Leave the berries at room temperature for 15 minutes, then refrigerate for 15 minutes until the shell is hard and matte.
