Ingredients:
- 4 (6 oz) Cod fillets
- 1/2 tsp sea salt
- 1/4 tsp cracked black pepper
- 1 tbsp extra virgin olive oil
- 2 tbsp unsalted butter
- 3 cloves garlic, minced
- 1 tbsp fresh lemon juice
- 1 tsp lemon zest
- 1 tbsp fresh parsley, chopped
Instructions:
- Pat the cod fillets completely dry with paper towels to ensure a crispy exterior. Season both sides evenly with sea salt and cracked black pepper.
- Heat the olive oil in a 12-inch skillet over medium-high heat until it shimmers.
- Carefully place the fillets in the pan. Sear undisturbed for 3–4 minutes until a mahogany-colored crust forms and the fish releases easily from the pan.
- Flip the fillets and sear for another 3 minutes.
- Reduce heat to medium. Add the butter and minced garlic to the pan.
- As the butter foams, stir in the lemon juice and lemon zest. Spoon the bubbling garlic butter over the fish for 60 seconds.
- Remove from heat and garnish with fresh parsley.
