Ingredients:

  • 4 (6 oz) Cod fillets
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper
  • 1 tbsp extra virgin olive oil
  • 2 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tbsp fresh parsley, chopped

Instructions:

  1. Pat the cod fillets completely dry with paper towels to ensure a crispy exterior. Season both sides evenly with sea salt and cracked black pepper.
  2. Heat the olive oil in a 12-inch skillet over medium-high heat until it shimmers.
  3. Carefully place the fillets in the pan. Sear undisturbed for 3–4 minutes until a mahogany-colored crust forms and the fish releases easily from the pan.
  4. Flip the fillets and sear for another 3 minutes.
  5. Reduce heat to medium. Add the butter and minced garlic to the pan.
  6. As the butter foams, stir in the lemon juice and lemon zest. Spoon the bubbling garlic butter over the fish for 60 seconds.
  7. Remove from heat and garnish with fresh parsley.
