Ingredients:
- 2 (6 oz) cod fillets
- 1 tbsp avocado oil
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tbsp fresh lemon juice
- 1 tsp fresh parsley, chopped
- lemon wedges for serving
Instructions:
- Pat the cod fillets aggressively dry with paper towels on all sides. Use your palm to gently flatten any overly thick sections of the fillet for an even cook. Rub the oil over the surface of the fish.
- Mix the garlic powder, smoked paprika, salt, and pepper in a small bowl. Sprinkle evenly over both sides of the fillets, pressing the spices into the flesh.
- Preheat your air fryer to 400°F (200°C). Place the fillets in the basket, ensuring they aren't touching. Cook for 5 minutes, then carefully flip with tongs and cook for another 5-7 minutes until the edges are mahogany-colored and the fish flakes easily.
- Remove the cod from the basket and let it rest on a plate for 2 minutes. Squeeze fresh lemon juice over the top and garnish with parsley.
