Ingredients:
- 4 (6 oz / 170g) Cod fillets
- ½ tsp (3g) Sea salt
- ¼ tsp (1g) Black pepper
- 2 tbsp (30ml) Olive oil
- 4 tbsp (57g) Unsalted butter
- 4 cloves (12g) Garlic, minced
- 1 tbsp (15ml) Fresh lemon juice
- 1 tbsp (4g) Fresh parsley, finely chopped
Instructions:
- Pat the cod fillets thoroughly dry with paper towels on all sides. Season both sides evenly with salt and black pepper. Set aside at room temperature for 5-10 minutes.
- Heat olive oil in a 12-inch non-stick or cast iron skillet over medium-high heat until it shimmers.
- Carefully place the fillets in the pan. Sear undisturbed for 3-4 minutes until the edges are golden-brown and the fish releases easily from the pan.
- Reduce heat to medium and flip the fillets. Immediately add the butter and minced garlic to the empty spaces in the pan.
- As the butter melts and foams, tilt the pan slightly and use a spoon to continuously pour the garlic butter over the fish for the final 2-3 minutes of cooking.
- Remove from heat. Drizzle the remaining pan butter and fresh lemon juice over the fillets. Garnish with chopped parsley.
