Ingredients:

  • 1 lb fresh strawberries, hulled and halved
  • 0.5 cup superfine granulated sugar
  • 0.75 cup freshly squeezed lime juice
  • 0.5 tsp citric acid
  • 0.25 tsp sea salt
  • 0.5 cup cold filtered water
  • 2 tbsp light agave nectar

Instructions:

  1. Macerating the Berries: Place your halved strawberries in a large bowl and sprinkle with the superfine sugar. Let them sit for 10 minutes until a vibrant, syrupy liquid begins to pool at the bottom.
  2. Emulsifying the Concentrate: Transfer the berries and all their juices into a high-speed blender. Add the lime juice, agave nectar, sea salt, and citric acid. Blend on medium-high for 60 seconds until the mixture is completely liquified and smooth.
  3. Refining the Texture: Pour the mixture through a fine-mesh sieve into a glass pitcher or storage bottle to remove the seeds. Press down on the solids with a spatula to extract all the liquid.
