Ingredients:

  • 2 cups (250g) All-purpose flour, sifted
  • 1 tbsp baking powder
  • 0.5 tsp salt
  • 2 tbsp granulated sugar
  • 0.5 cup (115g) unsalted butter, frozen
  • 0.75 cup (180ml) cold whole milk
  • 1 tsp vanilla extract
  • 1 tbsp melted butter
  • 0.5 cup (75g) sultanas or raisins

Instructions:

  1. Preheat your oven to 200°C (400°F).
  2. Whisk 250g flour, baking powder, salt, and sugar in a large bowl.
  3. Take your 115g frozen butter and grate it directly into the flour mixture using the large holes of a box grater.
  4. Use a fork to toss the butter shreds in the flour until every piece is coated.
  5. Fold in your 75g raisins if using.
  6. Mix 180ml cold milk with 1 tsp vanilla extract.
  7. Pour the milk into the dry ingredients. Stir with a fork just until a shaggy dough forms.
  8. Turn dough onto a floured surface. Pat it into a rectangle, fold it in half, and repeat three times.
  9. Press your cutter straight down to make 12 biscuits.
  10. Place on a tray, brush with 1 tbsp melted butter, and bake 15 minutes until golden and crackling.
