Ingredients:

  • 1.5 lbs Fingerling potatoes
  • 1.5 tbsp Avocado oil
  • 1 tsp Sea salt
  • 1/2 tsp Freshly cracked black pepper
  • 1 tsp Garlic powder
  • 1 tbsp Fresh rosemary, finely chopped

Instructions:

  1. Wash the fingerling potatoes thoroughly and pat them completely dry with a lint-free towel to ensure maximum crispiness. Slice any larger potatoes in half lengthwise for uniformity.
  2. In a large mixing bowl, toss the potatoes with avocado oil until evenly coated. Add the sea salt, black pepper, garlic powder, and chopped rosemary, tossing again to ensure the aromatics adhere to the potato skins.
  3. Preheat the air fryer to 400°F (200°C) for 3 minutes.
  4. Arrange the seasoned potatoes in the air fryer basket, ensuring they are not stacked more than two layers deep to allow for proper airflow.
  5. Air fry for 8 minutes at 400°F until the edges start to turn golden.
  6. Open the basket and give it a vigorous shake to redistribute the potatoes for even browning.
  7. Cook for another 7 minutes until the skins are wrinkled and shatter crisp.
  8. Taste one carefully and add a tiny pinch of extra salt if needed while they are still hot.
