Ingredients:
- 500g Roma Tomatoes, seeded and roughly chopped
- 75g White Onion, finely diced
- 20g Jalapeño Pepper, stemmed and seeded
- 15g Fresh Cilantro, loosely packed and chopped
- 30ml Fresh Lime Juice
- 6g Kosher Salt
- 1g Ground Cumin
- 6g Garlic, minced
Instructions:
- Seed the Roma tomatoes by slicing them in half and scooping out the watery pulp, then roughly chop the tomatoes into 1/2-inch cubes.
- Place the diced onion, jalapeño, and garlic into a food processor and pulse 3-4 times until the pieces are small but not pureed.
- Add the chopped tomatoes to the processor and pulse 2-3 times until the tomatoes are broken but still hold their shape.
- Transfer the mixture to a medium bowl and fold in the chopped cilantro, lime juice, salt, and ground cumin using a silicone spatula.
- Let the salsa sit at room temperature for 10 minutes before serving to allow the flavors to meld.
