Ingredients:

  • 500g Roma Tomatoes, seeded and roughly chopped
  • 75g White Onion, finely diced
  • 20g Jalapeño Pepper, stemmed and seeded
  • 15g Fresh Cilantro, loosely packed and chopped
  • 30ml Fresh Lime Juice
  • 6g Kosher Salt
  • 1g Ground Cumin
  • 6g Garlic, minced

Instructions:

  1. Seed the Roma tomatoes by slicing them in half and scooping out the watery pulp, then roughly chop the tomatoes into 1/2-inch cubes.
  2. Place the diced onion, jalapeño, and garlic into a food processor and pulse 3-4 times until the pieces are small but not pureed.
  3. Add the chopped tomatoes to the processor and pulse 2-3 times until the tomatoes are broken but still hold their shape.
  4. Transfer the mixture to a medium bowl and fold in the chopped cilantro, lime juice, salt, and ground cumin using a silicone spatula.
  5. Let the salsa sit at room temperature for 10 minutes before serving to allow the flavors to meld.
