Ingredients:
- 2 cups (300g) frozen mixed berries
- 1 tbsp (15ml) lemon juice
- 1/2 cup (100g) granulated sugar
Instructions:
- Combine the frozen mixed berries, granulated sugar, and lemon juice in your saucepan.
- Stir the mixture over medium heat until the fruit releases its juices and the sugar dissolves into a glossy syrup.
- Increase the heat to medium high and bring the mixture to a rolling boil. Note: A rolling boil is one that doesn't stop bubbling when you stir it.
- Simmer for 10-15 minutes, stirring frequently until the liquid reduces by about a third and the jam coats the back of a spoon.
- Perform the plate test: drop a small spoonful of jam onto your chilled plate.
- Place the plate in the freezer for 1 minute.
- Push the jam with your finger; if it wrinkles and holds its shape, it's done.
- Remove from heat immediately and transfer the jam to a glass jar.
