Ingredients:

  • 1.5 lbs (680g) Cod fillets
  • 1/2 tsp (3g) Salt
  • 1/4 tsp (1g) Black pepper
  • 1 tbsp (15ml) Olive oil
  • 4 tbsp (57g) Unsalted butter, melted
  • 3 cloves (9g) Garlic, minced
  • 1 tbsp (15ml) Fresh lemon juice
  • 1 tsp (2g) Lemon zest
  • 1/4 tsp (1g) Paprika
  • 1 tbsp (3g) Fresh parsley, chopped

Instructions:

  1. Preheat your oven to 400°F (200°C) and grease a 9x13 inch baking dish with olive oil.
  2. Use paper towels to pat the cod fillets completely dry on all sides, then season both sides lightly with salt and pepper.
  3. In a small bowl, whisk together melted butter, minced garlic, lemon juice, lemon zest, and paprika until the sauce is unified.
  4. Place the fillets in the baking dish and pour the butter mixture evenly over the top, spooning any excess sauce from the corners back onto the center of the fish.
  5. Bake for 12–15 minutes until the fish is opaque and reaches an internal temperature of 145°F (63°C).
  6. Garnish immediately with fresh parsley and an extra squeeze of lemon before serving.
