Ingredients:

  • 1 lb cod fillets
  • 1/2 tsp fine sea salt
  • 1/2 tsp cracked black pepper
  • 1/2 tsp smoked paprika
  • 2 tbsp unsalted butter
  • 1 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 tbsp fresh lemon juice
  • 1 tbsp fresh parsley, chopped

Instructions:

  1. Pat the cod fillets thoroughly dry on all sides using paper towels. In a small bowl, combine salt, pepper, and paprika, then dust both sides of the fillets evenly.
  2. Place a 12-inch cast iron or stainless steel skillet over medium-high heat and add the olive oil. Heat until the oil shimmers and begins to wispy-smoke. Lay the fillets in the pan and sear undisturbed for 3–4 minutes until a golden-brown crust forms.
  3. Flip the fillets. Immediately reduce heat to medium and add the butter and minced garlic to the pan. As the butter foams, tilt the pan slightly and use a spoon to continuously pour the bubbling garlic butter over the fish for the remaining 3 minutes until the fish flakes easily with a fork.
