Ingredients:
- 1 lb cod fillets
- 1/2 tsp fine sea salt
- 1/2 tsp cracked black pepper
- 1/2 tsp smoked paprika
- 2 tbsp unsalted butter
- 1 tbsp extra virgin olive oil
- 3 cloves garlic, minced
- 1 tbsp fresh lemon juice
- 1 tbsp fresh parsley, chopped
Instructions:
- Pat the cod fillets thoroughly dry on all sides using paper towels. In a small bowl, combine salt, pepper, and paprika, then dust both sides of the fillets evenly.
- Place a 12-inch cast iron or stainless steel skillet over medium-high heat and add the olive oil. Heat until the oil shimmers and begins to wispy-smoke. Lay the fillets in the pan and sear undisturbed for 3–4 minutes until a golden-brown crust forms.
- Flip the fillets. Immediately reduce heat to medium and add the butter and minced garlic to the pan. As the butter foams, tilt the pan slightly and use a spoon to continuously pour the bubbling garlic butter over the fish for the remaining 3 minutes until the fish flakes easily with a fork.
