Ingredients:
- 2 cups (260g) Gluten-free all-purpose flour blend
- 1 tsp (5g) Baking soda
- ½ tsp (3g) Salt
- 1 tbsp (8g) Ground cinnamon
- ½ tsp (1g) Ground nutmeg
- ½ tsp (1g) Ground ginger
- ¼ tsp (0.5g) Ground cloves
- 1 cup (245g) 100% pure pumpkin puree
- ¾ cup (150g) Brown sugar, packed
- ½ cup (120ml) Neutral oil
- 2 large eggs, room temperature
- 1 tsp (5ml) Vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C).
- Grease a 9x5 inch loaf pan and line the bottom and sides with parchment paper for an easy, clean release.
- In a medium bowl, combine the GF flour, baking soda, salt, cinnamon, nutmeg, ginger, and cloves. Whisk thoroughly to remove any clumps.
- In a large bowl, beat the pumpkin puree and brown sugar until smooth. Whisk in the oil, eggs, and vanilla extract until the mixture is velvety and fully emulsified.
- Gently fold the dry ingredients into the wet mixture using a rubber spatula. Stir only until no streaks of flour remain.
- Pour the batter into the prepared pan, smoothing the top with a spatula.
- Bake for 60–70 minutes. The bread is done when a toothpick inserted into the center comes out clean.
- Allow the bread to cool completely, then let it rest for 24 hours to allow the gluten-free starches to fully hydrate for the best texture.
