- 2 lb sweet potatoes, scrubbed and sliced into 1/4-inch rounds
- 3 tbsp olive oil
- 1 tsp kosher salt
- 1/2 tsp smoked paprika
- 1/4 tsp garlic powder
- 1/4 tsp cracked black pepper
- 3 tbsp extra virgin olive oil
- 1 tbsp fresh lime juice
- 2 tbsp fresh cilantro, finely chopped
- 1 pinch sea salt
Instructions:
- In a large mixing bowl, combine the sliced sweet potatoes with olive oil, salt, smoked paprika, garlic powder, and black pepper. Toss thoroughly until each slice is glistening and evenly coated.
- Allow the seasoned potatoes to sit for 5 minutes to let the seasonings adhere.
- Preheat the grill to medium-high heat (approximately 400°F / 200°C). Lightly oil the grates using a paper towel dipped in oil.
- Arrange the potato slices in a single layer on the grill, leaving space between each piece to avoid steaming.
- Grill the potatoes for 5 to 7 minutes per side, using tongs to flip them only once, until a mahogany-colored char forms.
- Remove the potatoes from the grill.
- In a small bowl, whisk together the extra virgin olive oil, fresh lime juice, chopped cilantro, and sea salt.
- Drizzle the dressing over the hot potatoes or toss them in a bowl with the sauce while they are still warm.
