Ingredients:

  • 2 lb sweet potatoes, scrubbed and sliced into 1/4-inch rounds
  • 3 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp smoked paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp cracked black pepper
  • 3 tbsp extra virgin olive oil
  • 1 tbsp fresh lime juice
  • 2 tbsp fresh cilantro, finely chopped
  • 1 pinch sea salt

Instructions:

  1. In a large mixing bowl, combine the sliced sweet potatoes with olive oil, salt, smoked paprika, garlic powder, and black pepper. Toss thoroughly until each slice is glistening and evenly coated.
  2. Allow the seasoned potatoes to sit for 5 minutes to let the seasonings adhere.
  3. Preheat the grill to medium-high heat (approximately 400°F / 200°C). Lightly oil the grates using a paper towel dipped in oil.
  4. Arrange the potato slices in a single layer on the grill, leaving space between each piece to avoid steaming.
  5. Grill the potatoes for 5 to 7 minutes per side, using tongs to flip them only once, until a mahogany-colored char forms.
  6. Remove the potatoes from the grill.
  7. In a small bowl, whisk together the extra virgin olive oil, fresh lime juice, chopped cilantro, and sea salt.
  8. Drizzle the dressing over the hot potatoes or toss them in a bowl with the sauce while they are still warm.
