Ingredients:

  • 2 lbs ground chicken
  • 1/2 cup finely diced white onion
  • 3 cloves minced garlic
  • 1/2 cup Italian breadcrumbs
  • 1/3 cup grated Parmesan cheese
  • 1/4 cup whole milk
  • 1 large egg, beaten
  • 2 Tbsp Worcestershire sauce
  • 1 Tbsp Dijon mustard
  • 1/4 cup chopped fresh parsley
  • 1 tsp chicken bouillon powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup ketchup
  • 2 Tbsp brown sugar
  • 1 Tbsp apple cider vinegar
  • 1/2 tsp smoked paprika

Instructions:

  1. In a large bowl, combine the ground chicken, onion, garlic, parsley, cheese, egg, milk, bouillon, and seasonings. Gently fold the ingredients together by hand until just combined to avoid overworking the meat.
  2. Preheat the oven to 350°F (175°C) and line a rimmed baking sheet with parchment paper.
  3. Shape the chicken mixture into a rectangular loaf approximately 9x5 inches directly on the prepared baking sheet, pressing the sides to maintain structure.
  4. Whisk the ketchup, brown sugar, apple cider vinegar, and smoked paprika in a small saucepan over medium heat until bubbling.
  5. Brush half of the glaze over the top of the meatloaf and bake for 40 minutes.
  6. Remove from oven, apply the remaining glaze, and bake for another 15-20 minutes until the internal temperature reaches 165°F (74°C).
