Ingredients:
- 2 lbs ground chicken
- 1/2 cup finely diced white onion
- 3 cloves minced garlic
- 1/2 cup Italian breadcrumbs
- 1/3 cup grated Parmesan cheese
- 1/4 cup whole milk
- 1 large egg, beaten
- 2 Tbsp Worcestershire sauce
- 1 Tbsp Dijon mustard
- 1/4 cup chopped fresh parsley
- 1 tsp chicken bouillon powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup ketchup
- 2 Tbsp brown sugar
- 1 Tbsp apple cider vinegar
- 1/2 tsp smoked paprika
Instructions:
- In a large bowl, combine the ground chicken, onion, garlic, parsley, cheese, egg, milk, bouillon, and seasonings. Gently fold the ingredients together by hand until just combined to avoid overworking the meat.
- Preheat the oven to 350°F (175°C) and line a rimmed baking sheet with parchment paper.
- Shape the chicken mixture into a rectangular loaf approximately 9x5 inches directly on the prepared baking sheet, pressing the sides to maintain structure.
- Whisk the ketchup, brown sugar, apple cider vinegar, and smoked paprika in a small saucepan over medium heat until bubbling.
- Brush half of the glaze over the top of the meatloaf and bake for 40 minutes.
- Remove from oven, apply the remaining glaze, and bake for another 15-20 minutes until the internal temperature reaches 165°F (74°C).
