Ingredients:
- 1 lb (450g) lean ground chicken
- 1/2 cup (50g) Panko breadcrumbs
- 1/4 cup (25g) grated Parmesan cheese
- 1 large egg, lightly beaten
- 2 cloves (6g) garlic, minced
- 1 tsp (2g) dried oregano
- 1/2 tsp (3g) salt
- 1/4 tsp (1g) black pepper
- 2 tbsp (30ml) olive oil
- 1 cup (240ml) low-sugar marinara sauce
- 1 cup (115g) shredded part-skim mozzarella cheese
- 1 tbsp (4g) fresh parsley, chopped
- 1 tbsp (4g) grated Parmesan cheese
Instructions:
- In a large mixing bowl, combine the ground chicken, panko, grated Parmesan, beaten egg, minced garlic, oregano, salt, and pepper. Stir gently with a spoon or your hands until just combined; avoid overworking the meat.
- Form the mixture into 4 equal patties, approximately 3/4 inch thick.
- Heat olive oil in the skillet over medium-high heat. Place patties in the pan and sear for 4–5 minutes per side until a mahogany-colored crust forms and the internal temperature reaches 155°F (68°C).
- Preheat your broiler and place the seared patties on a parchment-lined baking sheet.
- Spoon 1/4 cup (60ml) of marinara sauce over each patty, then top with a generous handful of mozzarella.
- Broil for 2–4 minutes until the cheese is bubbly and develops golden-brown spots.
- Garnish with fresh parsley and a dusting of Parmesan.
