Ingredients:
- 2 cups (180g) old-fashioned rolled oats
- 1 tsp (2g) baking powder
- 1 tbsp (8g) ground cinnamon
- 1/4 tsp (1.5g) fine sea salt
- 1 cup (240ml) unsweetened almond milk
- 1/2 cup (120g) plain Greek yogurt
- 1 large egg
- 2 tbsp (30ml) pure maple syrup
- 1 tsp (5ml) vanilla extract
- 2 medium (300g) Granny Smith apples, peeled and diced
- 1/2 tsp (1g) ground cinnamon
- 1 tbsp (15ml) melted coconut oil
Instructions:
- Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking pan with melted coconut oil or line it with parchment paper.
- In a large bowl, whisk together the 2 cups rolled oats, 1 tsp baking powder, 1 tbsp cinnamon, and 1/4 tsp salt.
- Stir in 1 cup almond milk, 1/2 cup Greek yogurt, 1 egg, 2 tbsp maple syrup, and 1 tsp vanilla extract. Mix until the batter is consistent and creamy.
- Place 2 diced Granny Smith apples in a separate bowl and toss them with 1/2 tsp cinnamon.
- Gently fold the cinnamon apples into the oat mixture. Make sure they're spread evenly so you don't get a fruit less corner.
- Spread the mixture into your prepared pan. Smooth the top with a spatula.
- Bake for 30 minutes until the edges are golden brown and the center doesn't jiggle.
- Let the Healthy Apple Oatmeal Bake cool for 5-10 minutes. This is the hard part, but it lets the structure set.
- Slice into 6 equal portions.
