Ingredients:

  • 1.5 lbs sirloin steak, cut into 1-inch cubes
  • 1 tbsp neutral oil
  • 1/2 tsp sea salt
  • 1/2 tsp coarse black pepper
  • 1/3 cup raw honey
  • 4 cloves garlic, minced
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp apple cider vinegar
  • 1/2 tsp red pepper flakes
  • 2 tbsp unsalted butter
  • 1 tbsp fresh parsley, finely chopped
  • 1 tsp toasted sesame seeds

Instructions:

  1. Pat the steak cubes completely dry with paper towels to ensure a proper sear. In a bowl, toss the cubes with sea salt, black pepper, and neutral oil.
  2. Heat a large cast-iron skillet over medium-high heat. Add the steak bites in a single layer, working in batches if necessary to avoid overcrowding. Sear undisturbed for 2 minutes, then flip and cook for an additional 90 seconds.
  3. Reduce heat to medium. Push steak to the edges of the pan and melt the butter in the center. Add minced garlic and sauté for 30 seconds until fragrant.
  4. Pour in the honey, soy sauce, apple cider vinegar, and red pepper flakes. Toss the steak bites continuously for 1-2 minutes until the sauce reduces into a thick, mahogany-colored glaze.
  5. Remove from heat immediately. Garnish with fresh parsley and toasted sesame seeds before serving.
