Ingredients:
- 1 lb lean ground beef
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 cup hot honey
- 1 tbsp soy sauce
- 1 tsp apple cider vinegar
- 2 medium sweet potatoes
- 1 cup low-fat cottage cheese
- 1 large avocado
- 2 tbsp fresh cilantro
- 1 tbsp lime juice
Instructions:
- Preheat air fryer to 400°F (200°C). Toss cubed sweet potatoes with a drizzle of oil and salt, then air fry for 10-12 minutes, shaking halfway through.
- Heat olive oil in a skillet over medium-high. Add ground beef in a thin layer and leave undisturbed for 3 minutes to develop a brown crust.
- Break the meat apart and stir in garlic powder, paprika, salt, and pepper until fully browned.
- Lower heat to medium. Pour in the hot honey, soy sauce, and apple cider vinegar mixture. Stir constantly for 60-90 seconds until the sauce becomes a velvety coating.
- Divide roasted sweet potatoes into four bowls. Top with the glazed beef, a scoop of cold cottage cheese, and avocado slices. Finish with lime juice and chopped cilantro.
