Ingredients:

  • 1 lb lean ground beef
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup hot honey
  • 1 tbsp soy sauce
  • 1 tsp apple cider vinegar
  • 2 medium sweet potatoes
  • 1 cup low-fat cottage cheese
  • 1 large avocado
  • 2 tbsp fresh cilantro
  • 1 tbsp lime juice

Instructions:

  1. Preheat air fryer to 400°F (200°C). Toss cubed sweet potatoes with a drizzle of oil and salt, then air fry for 10-12 minutes, shaking halfway through.
  2. Heat olive oil in a skillet over medium-high. Add ground beef in a thin layer and leave undisturbed for 3 minutes to develop a brown crust.
  3. Break the meat apart and stir in garlic powder, paprika, salt, and pepper until fully browned.
  4. Lower heat to medium. Pour in the hot honey, soy sauce, and apple cider vinegar mixture. Stir constantly for 60-90 seconds until the sauce becomes a velvety coating.
  5. Divide roasted sweet potatoes into four bowls. Top with the glazed beef, a scoop of cold cottage cheese, and avocado slices. Finish with lime juice and chopped cilantro.
