Ingredients:

  • 1 cup (250g) strawberry jam
  • 2 tbsp (30ml) water or corn syrup
  • 1 tbsp (15ml) fresh lemon juice
  • 1/4 tsp (1g) salt
  • 1/2 tsp (2.5ml) pure vanilla extract

Instructions:

  1. Combine the strawberry jam, water (or corn syrup), and lemon juice in a small saucepan.
  2. Stir over medium heat until the jam begins to soften and the mixture becomes a uniform, mahogany-red liquid.
  3. Increase the heat slightly to bring the sauce to a gentle bubble, stirring constantly for 2–3 minutes until the sauce thickens and develops a glossy surface.
  4. Remove the pan from the heat.
  5. Stir in the vanilla extract and salt.
  6. Let the sauce sit for 2 minutes to cool slightly to allow the viscosity to increase.
