Ingredients:
- 1.5 cups (190g) all-purpose flour
- 1/3 cup (65g) granulated sugar
- 1/2 cup (115g) unsalted butter, melted
- 0.25 tsp sea salt
- 3/4 cup (150g) light brown sugar, packed
- 1/2 cup (170g) light corn syrup
- 2 large eggs, room temperature
- 3 tbsp (45ml) premium Kentucky Bourbon
- 2 tbsp (28g) unsalted butter, melted and cooled
- 1 tsp pure vanilla extract
- 1 cup (125g) chopped pecans, toasted
- 1 cup (170g) semi-sweet chocolate chips
Instructions:
- Preheat oven to 350°F (175°C) and line an 8x8-inch pan with parchment paper. In a medium bowl, combine 1.5 cups flour, 1/3 cup granulated sugar, 0.25 tsp salt, and 1/2 cup melted butter. Press firmly into the pan and bake for 12–15 minutes until edges are pale gold.
- In a large bowl, whisk together 3/4 cup brown sugar, 1/2 cup corn syrup, 2 large eggs, 3 tbsp bourbon, 2 tbsp melted butter, and 1 tsp vanilla until smooth and emulsified. Manually stir in 1 cup toasted pecans and 1 cup chocolate chips.
- Pour the filling over the hot, par-baked crust. Return to the oven and bake for 20–25 minutes until the edges are set and slightly puffed, while the center retains a slight jiggle.
