Ingredients:

  • 1.5 cups (190g) all-purpose flour
  • 1/3 cup (65g) granulated sugar
  • 1/2 cup (115g) unsalted butter, melted
  • 0.25 tsp sea salt
  • 3/4 cup (150g) light brown sugar, packed
  • 1/2 cup (170g) light corn syrup
  • 2 large eggs, room temperature
  • 3 tbsp (45ml) premium Kentucky Bourbon
  • 2 tbsp (28g) unsalted butter, melted and cooled
  • 1 tsp pure vanilla extract
  • 1 cup (125g) chopped pecans, toasted
  • 1 cup (170g) semi-sweet chocolate chips

Instructions:

  1. Preheat oven to 350°F (175°C) and line an 8x8-inch pan with parchment paper. In a medium bowl, combine 1.5 cups flour, 1/3 cup granulated sugar, 0.25 tsp salt, and 1/2 cup melted butter. Press firmly into the pan and bake for 12–15 minutes until edges are pale gold.
  2. In a large bowl, whisk together 3/4 cup brown sugar, 1/2 cup corn syrup, 2 large eggs, 3 tbsp bourbon, 2 tbsp melted butter, and 1 tsp vanilla until smooth and emulsified. Manually stir in 1 cup toasted pecans and 1 cup chocolate chips.
  3. Pour the filling over the hot, par-baked crust. Return to the oven and bake for 20–25 minutes until the edges are set and slightly puffed, while the center retains a slight jiggle.
