Ingredients:
- 4 (6 oz / 170g) Cod fillets
- 1/4 cup (30g) All-purpose flour
- 1/2 tsp (3g) Salt
- 1/4 tsp (1g) Black pepper
- 2 tbsp (28g) Unsalted butter
- 1 tbsp (15ml) Olive oil
- 3 tbsp (42g) Unsalted butter
- 3 cloves (9g) Garlic, minced
- 2 tbsp (30ml) Freshly squeezed lemon juice
- 1 tsp (2g) Lemon zest
- 1 tbsp (3g) Fresh parsley, chopped
Instructions:
- Pat the cod fillets dry with paper towels.
- In a shallow dish, mix the flour, salt, and pepper.
- Lightly dredge each fillet in the flour, shaking off any excess.
- Heat the olive oil and 2 tbsp of butter over medium-high heat until the butter stops foaming and begins to brown slightly.
- Carefully lay the fillets in the pan and press down gently with a spatula for 5 seconds to ensure full contact.
- Sear undisturbed for 3–5 minutes per side until a golden-brown crust forms and the fish flakes easily with a fork.
- Remove fillets to a plate and let them rest.
- Lower the heat to medium. In the same pan, add the remaining 3 tbsp of butter.
- Stir in the minced garlic and cook for 30–60 seconds until fragrant but not brown.
- Stir in the lemon juice and lemon zest, whisking rapidly for 1 minute until the sauce is glossy and slightly thickened.
- Stir in the parsley and immediately spoon the sauce over the resting fillets.
