Ingredients:

  • 4 (6 oz / 170g) Cod fillets
  • 1/2 tsp (3g) Salt
  • 1/4 tsp (1g) Black pepper
  • 2 tbsp (28g) Unsalted butter, melted
  • 1 tbsp (15ml) Extra virgin olive oil
  • 3 cloves (9g) Garlic, minced
  • 1 tbsp (15ml) Fresh lemon juice
  • 1 tsp (2g) Lemon zest
  • 1/2 tsp (1g) Smoked paprika
  • 1 tbsp (4g) Fresh parsley, finely chopped

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Use paper towels to pat the cod fillets completely dry to ensure a slightly crispy exterior.
  3. Place fillets in a 9x13 inch baking dish and season both sides with salt and pepper.
  4. In a small bowl, whisk together the melted butter, olive oil, minced garlic, lemon juice, lemon zest, and smoked paprika until emulsified.
  5. Drizzle the lemon garlic butter sauce evenly over each fillet, ensuring the top and sides are fully coated.
  6. Bake on the center rack for 12–15 minutes, or until the sauce is bubbling and the fish reaches an internal temperature of 130°F (54°C).
  7. Remove from oven and sprinkle with fresh chopped parsley immediately.
