Ingredients:
- 4 (6 oz / 170g) Cod fillets
- 1/2 tsp (3g) Salt
- 1/4 tsp (1g) Black pepper
- 2 tbsp (28g) Unsalted butter, melted
- 1 tbsp (15ml) Extra virgin olive oil
- 3 cloves (9g) Garlic, minced
- 1 tbsp (15ml) Fresh lemon juice
- 1 tsp (2g) Lemon zest
- 1/2 tsp (1g) Smoked paprika
- 1 tbsp (4g) Fresh parsley, finely chopped
Instructions:
- Preheat the oven to 400°F (200°C).
- Use paper towels to pat the cod fillets completely dry to ensure a slightly crispy exterior.
- Place fillets in a 9x13 inch baking dish and season both sides with salt and pepper.
- In a small bowl, whisk together the melted butter, olive oil, minced garlic, lemon juice, lemon zest, and smoked paprika until emulsified.
- Drizzle the lemon garlic butter sauce evenly over each fillet, ensuring the top and sides are fully coated.
- Bake on the center rack for 12–15 minutes, or until the sauce is bubbling and the fish reaches an internal temperature of 130°F (54°C).
- Remove from oven and sprinkle with fresh chopped parsley immediately.
