Ingredients:
- 1 lb cod fillets
- 1/2 cup grated Parmesan cheese
- 2 tbsp almond flour
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- salt to taste
- black pepper to taste
- 3 tbsp unsalted butter
- 1 tbsp fresh lemon juice
- 1 tsp lemon zest
- 1 tbsp fresh parsley, finely chopped
Instructions:
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Pat the cod fillets completely dry on all sides using paper towels and season lightly with salt and pepper.
- In a small bowl, combine grated Parmesan, almond flour, garlic powder, and smoked paprika.
- Press the Parmesan mixture firmly onto the top of each fillet to create a thick, even layer, tucking in the edges.
- Bake for 10-12 minutes until the fish is opaque and the crust is deep golden brown.
- While fish rests for one minute, melt butter in a small skillet over medium heat, stirring in lemon juice and zest until emulsified.
- Remove sauce from heat, stir in chopped parsley, and drizzle immediately over the hot fillets.
