Ingredients:

  • 1 lb cod fillets
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp almond flour
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • salt to taste
  • black pepper to taste
  • 3 tbsp unsalted butter
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tbsp fresh parsley, finely chopped

Instructions:

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Pat the cod fillets completely dry on all sides using paper towels and season lightly with salt and pepper.
  3. In a small bowl, combine grated Parmesan, almond flour, garlic powder, and smoked paprika.
  4. Press the Parmesan mixture firmly onto the top of each fillet to create a thick, even layer, tucking in the edges.
  5. Bake for 10-12 minutes until the fish is opaque and the crust is deep golden brown.
  6. While fish rests for one minute, melt butter in a small skillet over medium heat, stirring in lemon juice and zest until emulsified.
  7. Remove sauce from heat, stir in chopped parsley, and drizzle immediately over the hot fillets.
