Ingredients:
- 1 lb lean ground beef
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp avocado oil
- 1/3 cup soy sauce
- 2 tbsp brown monk fruit sweetener
- 1 tbsp rice vinegar
- 1 tsp toasted sesame oil
- 1 tbsp fresh ginger, minced
- 3 cloves garlic, minced
- 1 lb green cabbage, shredded
- 3 green onions, sliced
- 1 tsp toasted sesame seeds
Instructions:
- Heat avocado oil in a 12-inch skillet over medium-high heat. Add ground beef, salt, and pepper. Cook, breaking the meat apart with a spatula, until browned and crisp. Drain excess fat if necessary.
- Stir in the minced garlic and ginger, sautéing for 60 seconds until fragrant.
- Pour in the soy sauce, monk fruit sweetener, rice vinegar, and sesame oil. Stir constantly for 2–3 minutes until the sauce bubbles and thickens into a glossy glaze.
- Add shredded cabbage ribbons and stir-fry on high heat for 3–5 minutes until the cabbage is tender-crisp and vibrant green. Remove from heat immediately.
- Garnish with sliced green onions and toasted sesame seeds before serving.
