Ingredients:

  • 1 lb lean ground beef
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp avocado oil
  • 1/3 cup soy sauce
  • 2 tbsp brown monk fruit sweetener
  • 1 tbsp rice vinegar
  • 1 tsp toasted sesame oil
  • 1 tbsp fresh ginger, minced
  • 3 cloves garlic, minced
  • 1 lb green cabbage, shredded
  • 3 green onions, sliced
  • 1 tsp toasted sesame seeds

Instructions:

  1. Heat avocado oil in a 12-inch skillet over medium-high heat. Add ground beef, salt, and pepper. Cook, breaking the meat apart with a spatula, until browned and crisp. Drain excess fat if necessary.
  2. Stir in the minced garlic and ginger, sautéing for 60 seconds until fragrant.
  3. Pour in the soy sauce, monk fruit sweetener, rice vinegar, and sesame oil. Stir constantly for 2–3 minutes until the sauce bubbles and thickens into a glossy glaze.
  4. Add shredded cabbage ribbons and stir-fry on high heat for 3–5 minutes until the cabbage is tender-crisp and vibrant green. Remove from heat immediately.
  5. Garnish with sliced green onions and toasted sesame seeds before serving.
