Ingredients:
- 3 lbs sweet potatoes, peeled and cut into 1-inch cubes
- 3 tbsp extra virgin olive oil
- 1 tsp kosher salt
- 1/2 tsp cracked black pepper
- 1 tsp garlic powder
- 2 tbsp pure maple syrup
- 1 tbsp unsalted butter, melted
- 1 tsp fresh thyme leaves
- 1/4 tsp smoked paprika
Instructions:
- Preheat the oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
- In a large mixing bowl, toss the cubed sweet potatoes with olive oil, salt, pepper, and garlic powder until every piece is evenly coated.
- Spread the potatoes in a single layer on the prepared baking sheet, ensuring at least an inch of space between the cubes to prevent steaming.
- Roast for 20–25 minutes, flipping the potatoes halfway through, until the edges are mahogany-colored and the centers are tender.
- While the potatoes are in their final 5 minutes of roasting, whisk together the melted butter, maple syrup, fresh thyme, and smoked paprika in a small bowl.
- Remove the pan from the oven, drizzle the savory maple glaze over the hot potatoes, and toss gently to coat.
