Ingredients:

  • 3 lbs sweet potatoes, peeled and cut into 1-inch cubes
  • 3 tbsp extra virgin olive oil
  • 1 tsp kosher salt
  • 1/2 tsp cracked black pepper
  • 1 tsp garlic powder
  • 2 tbsp pure maple syrup
  • 1 tbsp unsalted butter, melted
  • 1 tsp fresh thyme leaves
  • 1/4 tsp smoked paprika

Instructions:

  1. Preheat the oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
  2. In a large mixing bowl, toss the cubed sweet potatoes with olive oil, salt, pepper, and garlic powder until every piece is evenly coated.
  3. Spread the potatoes in a single layer on the prepared baking sheet, ensuring at least an inch of space between the cubes to prevent steaming.
  4. Roast for 20–25 minutes, flipping the potatoes halfway through, until the edges are mahogany-colored and the centers are tender.
  5. While the potatoes are in their final 5 minutes of roasting, whisk together the melted butter, maple syrup, fresh thyme, and smoked paprika in a small bowl.
  6. Remove the pan from the oven, drizzle the savory maple glaze over the hot potatoes, and toss gently to coat.
